Original Roast Turkey Recipe

Herb-Crusted Citrus Turkey:

  • Ingredients:
  • 1 whole turkey (about 14-16 pounds), giblets removed
  • 2 oranges, quartered
  • 2 lemons, quartered
  • 1 bunch fresh rosemary
  • 1 bunch fresh thyme
  • 1 bunch fresh sage
  • 4 cloves garlic, minced
  • 1/2 cup olive oil
  • Salt and freshly ground black pepper
  • 2 cups chicken or turkey stock
  • Instructions:
  1. Preheat your oven to 325°F (165°C).
  2. Rinse the turkey and pat it dry with paper towels.
  3. Place the orange and lemon quarters inside the turkey cavity along with half of the rosemary, thyme, and sage.
  4. Mix the minced garlic with olive oil, salt, and pepper. Rub this mixture all over the turkey, including under the skin.
  5. Place the turkey in the roasting pan. Pour the stock into the bottom of the pan.
  6. Roast the turkey for about 3 to 3 1/2 hours, or until the internal temperature reaches 165°F (74°C).
  7. Let the turkey rest for 20 minutes before carving.

Original Side Dishes

Maple-Glazed Carrots:

  • Ingredients:
  • 2 pounds carrots, peeled and sliced
  • 1/4 cup maple syrup
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste
  • Instructions:
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the carrots with maple syrup, butter, salt, and pepper.
  3. Spread the carrots in a single layer in the roasting pan.
  4. Roast for 25-30 minutes, or until tender and caramelized.

Crispy Smashed Potatoes:

  • Ingredients:
  • 2 pounds small potatoes
  • 1/4 cup olive oil
  • Salt and freshly ground black pepper
  • Fresh parsley, chopped for garnish
  • Instructions:
  1. Boil the potatoes until they are fork-tender.
  2. Preheat your oven to 425°F (220°C).
  3. Drain the potatoes and let them cool slightly. Then, using the bottom of a cup, gently smash each potato to about 1/2 inch thickness.
  4. Drizzle olive oil over the potatoes and season with salt and pepper.
  5. Roast in the oven for 20-25 minutes, or until crispy and golden brown.
  6. Garnish with fresh parsley before serving.
